Last night, my sister and I decided to make a quick yet elegant meal for a Monday night. What was on the menu, you ask? Well it all started with a bi-monthly magazine we get, called Cuisine at Home (check it out here). I love it because they have pictures for EVERY step. No joke. Anyway, we decided to try their recipe for proscuitto wrapped scallops and that led us to this:
- Grilled Proscuitto Wrapped Scallops & Grilled Lemon (from this month's issue)
- Crab Cakes (store bought)
- Orzo Risotto with Spring Greens
- Asparagus (none for me, thanks...)
Surprisingly, the most time consuming part of the entire meal was the risotto, which, naturally, I was responsible for.
