Bake It: Baked Egg Cups


This weekend, I decided to put a new spin on scrambled eggs.  I saw an idea on Pinterest for Baked Egg & Turkey Cups, but I didn't have any deli turkey on hand.  Instead, I baked bacon pieces in a muffin tin & drained the grease out.  I then prepared my scrambled eggs the way I like them (with some chives, cheese & a touch of milk) & filled the bacon cups with about 4 tablespoons of the mixture.  13 minutes & 400 degrees later, they were perfect.  I topped with cheese & salsa... what a delicious & easy treat!
