Wednesday Wishes: Jewel Tone Pea Coat

Happy dreary Wednesday dear readers!  It seems much of the US is shrouded with gloom today.  As such, I've decided that today's lust-worthy wish is to find a beautiful jewel tone pea coat.

Grilled mahi mahi with roasted garlic & corn couscous


I always enjoy finding new recipes that are easy & delicious.  My sister & I took advantage of the warm weather we were experiencing this weekend by grilling Mahi Mahi spiced with Jerk Seasoning that we picked up on our trip to Jamaica last summer.

I followed this recipe for roasted garlic & corn couscous, but altered it slightly for the whole wheat pearl couscous we had in our cabinet.  All in all, it was a simple & extremely wonderful meal that I can bet we'll cook again!

Hello Winter

Snowy days

Today is the first real day we've seen snow here... it makes me want to finally get to turning old sweaters into cozy socks, drink tea & sit in front of a roaring fire wrapped in a thick throw.  Instead, I'll be working today watching the snow fall out the windows.

Christmas Wreath: Buy it or DIY it?

During after Christmas sales, I decided it was time for me to invest in a wreath... but none I found were really what I was looking for.  My sister helped me find some greenery as well as a few glittery decorations to put around it so I could have exactly what I wanted.

All I used was a plain wreath, silver eucalyptus leaves, red berries, a few pinecones & mini bulbs





At 60% off, it cost me a whopping $5.74 and it took about 15 minutes to put together.  While I am still looking for the perfect ribbon to make a bow, I'm still set for next year.

The Verdict?  DIY it!

2012: A New Year Begins

Today starts the beginning of what I anticipate to be another wonderful year.  It's a time to review the best parts of the previous year as well as set all those well meaning intentions for the year ahead.

So here's to what was a great 2011 filled with travel, adventure and new experiences...
A girls' trip to Montego Bay, Jamaica
The 2 hour shuttle ride to La Romana in the Dominican Republic was well worth it
ATV riding through the jungles of Maroma Beach, Mexico, was a blast

The question remains, though, what was the best part of 2011?  Discovering a way to take my passion for marine life to a new level... learning to SCUBA in Freeport & diving on various occasions after.

It was year of overcoming fears & trying to new things.

I plan for 2012 to be an extension of 2011.  Here's a few of my goals:
- Travel to new places like Aruba, Key West, Curacao & Cozumel
- Get back to my favorite places like Siesta Key & San Salvador, Bahamas
- Blog more
- Be grateful for one thing each day
- Try new recipes (like this one:  Champagne Cake Pops?  Yes, please!)
