Post Superbowl Sunday: Beer Dip


For an easy, crowd pleasing snack, try Beer Dip at your next get together.  Simply combine two 8 oz packages of cream cheese (softened), a packet of ranch dressing mix and two cups of shredded cheddar cheese.  After you've combined these ingredients, add 1/3 cup of light beer (dark or "flavorful" beers tend to give an odd taste so stick with something light!) and continue mixing.  Refrigerate for at least three hours and enjoy with pretzels!

Well, Punxsutawney Phil saw his shadow yesterday, but apparently he's only right 30% of time... lucky for me, Buckeye Chuck did not and he's averaging 71% accuracy.  I think I'll go with his prediction!!  Today, my 5 favorites are my Top 5 Spring Must Haves...

Bake It: Baked Egg Cups


This weekend, I decided to put a new spin on scrambled eggs.  I saw an idea on Pinterest for Baked Egg & Turkey Cups, but I didn't have any deli turkey on hand.  Instead, I baked bacon pieces in a muffin tin & drained the grease out.  I then prepared my scrambled eggs the way I like them (with some chives, cheese & a touch of milk) & filled the bacon cups with about 4 tablespoons of the mixture.  13 minutes & 400 degrees later, they were perfect.  I topped with cheese & salsa... what a delicious & easy treat!
